Claypot Protein Pasta

Serves 8
Ingredients:
- 14.5 oz (≈ 1 box) protein pasta (or high-protein pasta of choice)
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- 1 large onion, chopped
- 1 lb lean ground beef
- 24 oz marinara sauce
- 1 Tbsp Italian seasoning
- 2 large eggs
- ¼ cup fresh parsley, chopped
- 1 cup Greek yogurt (plain, non-fat or low-fat)
- 1 cup cottage cheese
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
Instructions (Claypot + Oven Hybrid Method)

Cook the Pasta in Claypot
- Add in the Pasta and fill Claypot with enough water to cover the pasta and salt it.
- Use Pasta mode on the Claypot Cooker.
- Once cooked al dente, drain thoroughly.

Make the Sauce in Claypot
- Switch Claypot to Sauté High.
- Add olive oil (if needed), then sauté garlic and onion until fragrant and translucent.
- Add ground beef. Cook until browned, breaking it apart.
- Stir in marinara sauce and Italian seasoning. Let it simmer just to meld flavors (2–3 minutes).
- Remove the claypot from the cooker and set aside the sauce.

Layering in the Claypot Vessel (for Oven Baking)
- Preheat your oven (if using) to ~350°F (or as called for in the original recipe).
- Line the inside of the claypot (or the claypot insert you will bake) with parchment paper—leaving an overhang so you can lift out the finished bake.
- Begin Layerings:
- Spread a thin layer of meat + sauce at the bottom.
- Add half of the drained pasta.
- Spread the cheese & yogurt mixture (eggs + parsley + Greek yogurt + cottage cheese + Parmesan) over pasta.
- Add the remaining pasta.
- Pour remaining meat sauce over the top and finish with shredded mozzarella on top.

Bake in the Oven
- Place the claypot directly into the oven.
- Bake for ~25–30 minutes, or until the cheese is melted, golden in spots, and the bake is heated through.
- If the top needs browning, you can broil for the last 1–2 minutes.

Serve
- Remove from the oven and let rest for ~5 minutes to set.
- Use the parchment overhang to lift the bake out (if you prefer).
- Slice and serve hot, with extra parsley or grated cheese if desired.
