Claypot Protein Pasta

Serves 8

Ingredients:
  • 14.5 oz (≈ 1 box) protein pasta (or high-protein pasta of choice)
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 1 lb lean ground beef
  • 24 oz marinara sauce
  • 1 Tbsp Italian seasoning
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • 1 cup Greek yogurt (plain, non-fat or low-fat)
  • 1 cup cottage cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
Instructions (Claypot + Oven Hybrid Method)
  1. Cook the Pasta in Claypot
    1. Add in the Pasta and fill Claypot with enough water to cover the pasta and salt it.
    2. Use Pasta mode on the Claypot Cooker.
    3. Once cooked al dente, drain thoroughly.
  2. Make the Sauce in Claypot
    1. Switch Claypot to Sauté High.
    2. Add olive oil (if needed), then sauté garlic and onion until fragrant and translucent.
    3. Add ground beef. Cook until browned, breaking it apart.
    4. Stir in marinara sauce and Italian seasoning. Let it simmer just to meld flavors (2–3 minutes).
    5. Remove the claypot from the cooker and set aside the sauce.
  3. Layering in the Claypot Vessel (for Oven Baking)
    1. Preheat your oven (if using) to ~350°F (or as called for in the original recipe).
    2. Line the inside of the claypot (or the claypot insert you will bake) with parchment paper—leaving an overhang so you can lift out the finished bake.
    3. Begin Layerings: 
      1. Spread a thin layer of meat + sauce at the bottom.
      2. Add half of the drained pasta.
      3. Spread the cheese & yogurt mixture (eggs + parsley + Greek yogurt + cottage cheese + Parmesan) over pasta.
      4. Add the remaining pasta.
      5. Pour remaining meat sauce over the top and finish with shredded mozzarella on top.
  4. Bake in the Oven
    1. Place the claypot  directly into the oven.
    2. Bake for ~25–30 minutes, or until the cheese is melted, golden in spots, and the bake is heated through.
    3. If the top needs browning, you can broil for the last 1–2 minutes.
  5. Serve
    1. Remove from the oven and let rest for ~5 minutes to set.
    2. Use the parchment overhang to lift the bake out (if you prefer).
    3. Slice and serve hot, with extra parsley or grated cheese if desired.
