Curry Crab Boil

- Serves: 4
Ingredients:
- ½Tbsp Jamaican Curry Powder
- ½ Tbsp Cajun Seasoning
- 2 Stalk Green Onion, Sliced
- 2 Cloves Garlic, Minced
- 1 ½ lbs Crab Legs
- 13 oz. Andouille Sausage
- 2 Pieces Corn
- ½ lb Crawfish
- ½ lb Shrimp
- ½ Small Red/Yellow Potatoes
- 1 Lemon
- 1 Orange

¼ cup Butter or Ghee
- 4 cups Water
- Parsley for Garnish
Instructions:
- Set Claypot Oven to SEAR and preheat.
- Add butter or ghee to Claypot and melt until browned. Add curry powder and stir in. Add green onion and garlic to Claypot and stir until fragrant.
- Add water to the Claypot and set to BRAISE to start boiling.
- Squeeze half of the lemon and cut the other half into slices and add to the Claypot. Repeat this step with the orange. Add the cajun seasoning and stir.
- Cut the corn in half and add them to the Claypot along with the potatoes. Cover to let boil for 10 minutes.
- While the water is boiling, slice sausage into ½ inch thick slices then add to the Claypot to cook for an additional 5 minutes.
- Add crawfish, shrimp and crab on top to boil/steam for an additional 5-10 minutes. Garnish with chopped parsley and remaining cajun seasoning & enjoy.
