Garlic Wine Mussels in the Claypot Oven

Prep Time: 10 m. • Cook Time: 20 m.
Serves: 3-4
Ingredients:
- 2 Tbsp Unsalted Butter
- 1 small Onion, finely chopped
- 2 tsp Fresh Garlic, crushed
- 1/2 tsp Chili Flakes
- 1 cup Dry White Wine
- 1 cup Fresh Cream (whipping cream)
- 1 lb Half-Shell Mussels
- Salt and Black Pepper, to taste
- 1 Lemon, zest and juice
- 1/2 cup Parsley, chopped
Instructions:
- Preheat Claypot Oven to Sear/Sauté High.
- Add Butter, then sauté Onion, Garlic, and Chili Flakes until soft and fragrant.
- Add Wine and cook until reduced by about two-thirds.
- Add Cream and simmer for 2–3 minutes.
- Place Mussels in the Claypot, cover with lid, and switch to Sear/Sauté Low. Cook for 8–10 minutes, or until Mussels are fully open and tender.
- Turn off Claypot. Add Lemon Zest, Lemon Juice, and Parsley. Stir gently to coat. Season with Salt and Black Pepper to taste.
