Garlic Wine Mussels in the Claypot Oven

Prep Time: 10 m. • Cook Time: 20 m.

Serves: 3-4

Ingredients:
  • 2 Tbsp Unsalted Butter
  • 1 small Onion, finely chopped
  • 2 tsp Fresh Garlic, crushed
  • 1/2 tsp Chili Flakes
  • 1 cup Dry White Wine
  • 1 cup Fresh Cream (whipping cream)
  • 1 lb Half-Shell Mussels
  • Salt and Black Pepper, to taste
  • 1 Lemon, zest and juice
  • 1/2 cup Parsley, chopped
Instructions:
  1. Preheat Claypot Oven to Sear/Sauté High. 
  2. Add Butter, then sauté Onion, Garlic, and Chili Flakes until soft and fragrant.
  3. Add Wine and cook until reduced by about two-thirds.
  4. Add Cream and simmer for 2–3 minutes.
  5. Place Mussels in the Claypot, cover with lid, and switch to Sear/Sauté Low. Cook for 8–10 minutes, or until Mussels are fully open and tender.
  6. Turn off Claypot. Add Lemon Zest, Lemon Juice, and Parsley. Stir gently to coat. Season with Salt and Black Pepper to taste.
