Smashed Beef Kebab

Serves 4

Ingredients:

For Beef

  • 16 oz (1 lb) Ground Beef (80% lean recommended)
  • 1 small Yellow Onion, grated
  • ½ tsp Ground Turmeric
  • 2 tsp Kosher Salt, divided
  • Freshly Ground Black Pepper, to taste

For Cucumber Yogurt

  • 2 mini Cucumbers (≈ ½ lb), grated
  • 2 cups Greek Yogurt (full-fat or low-fat)
  • 1 large Garlic Clove, finely grated
  • 3 Tbsp Mint, finely chopped (plus extra leaves for garnish)

For Finishing

  • ¼ cup Walnuts (or substitutes like Pistachios), chopped
  • 2 Tbsp Raisins or Dried Cranberries
  • Pomegranate Molasses (optional, for drizzling)
  • Warm Pita or Cooked Rice, for serving
Instructions (Claypot Cooker Method)
  1. Prep the Cucumber Yogurt
    Combine yogurt, grated cucumber, chopped mint, garlic, and 1 tsp salt in a bowl. Stir well, then chill in fridge while cooking beef.
  2. Season the Beef
    In a bowl, mix ground beef with grated onion, turmeric, remaining 1 tsp salt, and black pepper.
  3. Sear and Smash the Beef
    Set your Magnifique Claypot Cooker to Sauté HIGH. Add beef mixture, breaking into large irregular chunks. Let sit undisturbed until underside is charred and crisp, about 6–8 minutes.
  4. Finish Beef with Add-Ins
    Toss beef to break up large pieces. Add walnuts and raisins. Cook 2–3 minutes, stirring often, until walnuts are toasted and beef is cooked through.
  5. Assemble and Serve
    Spread chilled cucumber yogurt on platter. Top with smashed beef. Garnish with mint leaves and drizzle with pomegranate molasses if desired. Serve with warm pita or over rice.
