Smoky Chipotle Black Bean Burgers

Serves: 4-6

Ingredients:
  • 1 can of Black Beans, drained, mushed
  • 2 Garlic Cloves, minced
  • 2 Tbsp Red Onion, chopped
  • ¼ cup Red Pepper, diced
  • 1 Tbsp Garlic Powder
  • ½ Tbsp Chili Powder
  • 1 Tbsp Paprika
  • 1 Chipotle Pepper, diced
  • 1 Tbsp Chipotle Pepper Adobo Sauce (from the same can as the Chipotle Pepper)
  • 1 Egg
  • ½ cup Cilantro, chopped
  • ¼ cup Green Onion, sliced
  • 2 Tbsp Flour
  • 1 Tbsp Neutral Oil
Instructions:
  1. Start by grabbing your drained black beans and mashing them in a bowl. Make sure not to over do it so the patties can still form - use medium mash, if that makes sense.
  2. Combine the garlic, red onion, red pepper, chipotle pepper, chipotle pepper sauce, cilantro, and green onion by folding gently just so it mixes. DO NOT OVERMIX as this may affect the texture of your patties. 
  3. Add in your seasoning: garlic powder, chili powder, paprika, and flour and mix gently again. This will be your mix for your burger patties.
  4. Store in the fridge for 30 minutes or until firm.
  5. 10 minutes before your mix is ready, preheat theClaypot Oven to Sear/Sauté High. 
  6. Form your patties and place them on parchment paper. 
  7. Oil your Claypot with any neutral oil, and gently add the patties, 3-4 at a time depending on size. 
  8. Cook on one side for about 10 minutes or until firm with a little crisp. 
  9. For the other side of the patty, you just want to get a good crisp sear, about 3-4 minutes.
  10. Add cheese to your patties to melt if desired. 
  11. Toast your buns and add whatever toppings you want, like Claypot grilled onions, avocado, lettuce, tomato, etc. Prepare your burger and enjoy!
Notes for Vegetarian or Vegan options:
  1. Replace the egg with Flax Egg (1 Tbsp ground flaxseed with 2.5 Tbsp water, let set for 5-10 minutes to gel). 
  2. Replace egg with Chia Egg (same directions as Flax Egg). 
  3. Replace egg with ¼ cup of mashed sweet potato or pumpkin. 
  4. Replace egg with breadcrumbs (¼ cup) and a splash of almond, soy, or oat milk.
