Claypot Chicken and Mushroom Pasta

Prep Time: 10 m. • Cook Time: 20 m.

Serves: 3-4

Ingredients:
  • 2 Chicken Breasts, boneless & diced
  • 1 cup Mushrooms, sliced
  • 2 Tbsp Olive Oil
  • 2 cloves Garlic, minced
  • ½ cup Heavy Cream
  • ½ cup Chicken Broth
  • ½ box Pasta of Choice (8oz)
  • ¼ cup Grated Parmesan Cheese, fresh
  • Salt and Pepper to taste
  • Thyme for Garnish
Instructions:
  1. Spread pasta of choice evenly in the Claypot, then pour enough water so the pasta is covered but not submerged. Set the Claypot Oven to the Pasta Mode and let it cook for about 10 minutes or until Al Dente.
  2. Set aside Pasta once fully cooked, then change the Claypot Oven Mode to Sear/Sauté High.
  3. Pour olive oil into the preheated Claypot, then cook your chicken until browned and cooked through, about 8-10 minutes. Set aside after fully cooking.
  4. Saute your garlic and mushrooms until softened, then add heavy cream and chicken broth and stir until thickened. 
  5. Add parmesan cheese then salt and pepper to your liking. 
  6. Once the sauce is ready, toss in the chicken and pasta and mix until combined thoroughly.
  7. Garnish the dish with some fresh thyme or more parmesan and enjoy!
