Creamy Rosato Salmon

Creamy Rosato Salmon

Prep Time: 10 m. • Cook Time: 15 m.

Serves: 3-4

Ingredients:
  • 1 ¼ lb Salmon Fillet, skinned and cut into 4 portions
  • ¼ tsp Salt
  • ¼ tsp Lemon Pepper
  • 2 Tbsp Olive Oil
  • 1 Medium Zucchini, halved lengthwise & sliced thinly
  • ½ cup Onion, chopped
  • ⅓ cup Dry White Wine
  • 1 (15 Oz.) can Diced Tomatoes (no salt added)
  • 1 tsp Italian Seasoning
  • ½ tsp Garlic Powder
  • ¼ cup Chopped Fresh Basil
Instructions:
  1. Preheat the Magnifique Claypot Oven to Sear/Sauté High. 
  2. Pat salmon filets dry and season with Salt and Lemon Pepper.
  3. Once preheated, add olive oil and then your salmon. 
  4. Cook the salmon until browned on both sides and opaque in the middle. Set aside.
  5. Add onions and zucchini to your Claypot, season with salt and pepper, and Sauté until softened.
  6. Add white wine and cook until the liquid has mostly evaporated.
  7. Once evaporated, add in the tomatoes, cream cheese, italian seasoning, garlic powder, and season once again to your liking.
  8. Mix well and continue stirring until the cream cheese has melted and the sauce is to your desired thickness. Place your salmon back in the Claypot on top of the sauce. 
  9. Add some fresh basil for a garnish, serve, and enjoy!
