Filipino Sinigang

Prep Time: 10 m. • Cook Time: 1 h 15 m.
Serves: 3-4 People
Ingredients:
- 2 lbs Pork Belly, stew cuts or cubed
- 2 pkgs of Tamarind Soup Base Mix
- 1 bunch Water Spinach, chopped
- 8 String Beans, cut into 2 inch pieces
- 2 Eggplants, sliced
- 1 Daikon Radish, sliced (optional)
- 8 Okra Pods
- 2 Tomatoes, quartered
- 2 Yellow Peppers
- 1 Onion, sliced
- 1 ½ qts of Water
- Fish Sauce and Pepper to season
Instructions:
1. Preheat the Magnifique Claypot Oven to Seat/Sauté High mode.
2. Once preheated, add in some neutral oil and sauté the onions just for a minute, then add the tomatoes and pork belly.
3. Mix one package of Tamarind Soup Base with water, and then pour into the Claypot, making sure to mix well.
4. Once the water is boiling, change the cooking Mode to Braise and let it cook for about 1 hour. Make sure to skim-off the floating scums from the pork belly.
5. Once the pork belly is tender, add the rest of your veggies except the water spinach on top and cover with the lid for about 5-10 minutes.
6. Turn off your Claypot Oven, throw in the water spinach and mix to cook it with residual heat.
7. Season with extra tamarind soup base at the end if you like it really sour, or add fish sauce to give it more salty umami flavoring.
8. Enjoy the steaming soup with some rice or by itself!
